Cooking With Chef Zees - French Cuisine

French Cuisine will be the focus of the new cooking class by Chef Zees. The class which is scheduled for November 15 and 22 and December 6 and 13 from 5:30-8 pm. Two dishes on tap will be Mousse au Chocolat and Creme Brulee. The 4 week class costs $50 plus $5 per class for food each week. Sign up TWO WEEKS EARLY FOR A $10 Discount!!! My New class "Dinner on a Dime" is now scheduled for October 17 and 25 and November 1 and 8 - 5:30-8 pm 4 weeks $50 plus $5 per class for food each week. Cooking with Chef Zees Class Schedule - 2011-12 School Year

I am pleased to announce the new schedule for the upcoming MVUSD Adult Education school year.  To enroll, contact Judy McClelland, Adult School Secretary, 951-696-3805 ext. 5194.

Cost is $45 per session (if you sign up 2 weeks early you get a $10 discount!), $5 fee per week in class for provided food.
CLASSES FROM 5:30 TO 8 PM on Tuesday Evenings.

New Cooking Classes Coming!!

The new Chef Zees Cooking Classes will be starting in September.  Going to be doing some new stuff this year.  Having a class for "Parent and Me" so that kids can get more involved with cooking.  Also going to have classes geared towards Low Calorie Foods, Cooking on a Dime, Comfort Foods, French Recipes, "Around the World" (4 different countries in one session) and much much more.  Keep checking the blog for more info!!!

Cooking Class - Chef Zees

Wow, we are on the downward slide for this school year.  The last two weeks of my cooking class are coming up so darned fast!  We will be concentrating on casseroles/comfort type foods.  Next school year classes will start up in September.  I haven't set the sessions yet but be assured that it will be good!  I may even have a class on vegetarian/gluten free type foods!  I'm also thinking of having a Parent/Child cooking class.  There has been a lot of interest in this!  So, next year will be a blast - join me in a class and you will learn a lot of great dishes and meet some very nice people!

Another Update for May's Class

I was wrong, goodness, I hate to say that!! ha ha ha!   You can sign up this week at Adult Ed and still get the $10 discount.  The office is open!  Not sure if they are open next week - spring break starts and goes for two weeks.  SOOOOOO, get in by Thursday this week to make sure you get the discount!  See you all in class on May 3rd.

May Cooking Class - Update

The May cooking class starts on 5/3 BUT if you sign up early you get a $10 discount AND that means you need to sign up by Thursday, March 31st because the Adult Ed office is going to be closed for two weeks for spring break - SO, SIGN UP BY THIS THURSDAY FOLKS TO GET THE DISCOUNT!!  We will be looking Chinese food for 2 weeks and casseroles/comfort food for two weeks.  This is the last class until late September/early October.

May Cooking Class

The May cooking class will start with 2 weeks of Chinese food - i.e. Orange Chicken, Beef with Broccoli, Spring Rolls, Hot and Sour Soup - all absolutely yummy dishes.  The second two weeks will be good old All American Comfort Foods - Casseroles of all types!  Class starts on 5/3 - sign up early to get the $10 discount!

Chocolate Mousse and More

Tuesday night we made choclate mousse - what a wonderful way to finish a great meal!  Next week we are going to be having Porc with dried fruits.  Can't wait to share this recipe with the students!

At the first class of the next session on March 8th, we will start out making Carnitas.  It is a recipe that I learned in a class I took in Temecula.  It has always been one of my favorites and I'm so glad to pass it on to others.

Murrieta Valley Unified, Adult Ed. Department announces a new Cooking Class featuring Mexican and Italian Cooking starting March 8th from 5:30-8 pm, for 4 consecutive Tuesdays. Cost is $45, a $10 discount is available if you sign up 2 weeks prior to class. You must to sign up prior to start of class by calling Judy McClelland at 951-696-3805 ext. 5194. French Cooking Class - Week 2 Menu

I have settled on the menu for Tuesday's Class - here it is!

Mousse au Chocolat

The Mousse has to be prepared and refrigerated for at least six hours prior to eating so,,, I will prepare it ahead of time and take it to class.  Then, in class, we will make another one so that the students will know how to do it at home.

Over in the low desert - Cathedral City to be precise, is a wonderful antique store - Victoria's Attic.  They have a really big selection of antiques of all types.  They have over 8000 square feet of goodies, including a huge amount of fabulous furniture!  They are located on E. Tasty Treats and MORE

Today I made a cheese quesadilla that turned out absolutely wonderful.  I mixed grated cheese with a new seasoning I got from Williams Sonoma.  It was a sauce made with pomegranites, chipotle and other yummy stuff.  Then I added some Tony Chachere's creole seasoning and a little garlic/onion spice.  It had a spicy yet sweet flavor that was just wonderful!

Last night we stopped at Fish House Vera Cruz and picked up halibut.  We baked it and then made a wonderful sauce to go on top.  It turned out soooo good!  I love experimenting with whatever I have in the house.  It usually makes really tasty stuff!!

Mourning

This morning we are all mourning the loss of life in Tucson.  These senseless acts of violence need to stop.  What is wrong with the world?!  I hate to say this but - Can't we all just get a long?  Hate, violence and the need to hurt people somehow should be turned into love.  Instead of hating, let's all try to understand other people's way of life.  Give peace and understanding a chance. 

My heart goes out to the families of the victims in Tucson.  My thoughts and prayers are with you and I pray for your peace of mind.  I hope your healing starts soon.

New Mexican Sauce!


You are going to love this one folks!  It can be made with chicken broth for all of my carnivore buddies but try it this way first!

Chef Zees Poblano Chili Sauce


3 Roasted Poblano Chilis
3 Cloves Garlic, finely minced
1 Onion chopped into small pieces
8 ounces Vegetable Broth
1 tsp Salt
½ tsp Freshly Ground Pepper
¼ Cup Fresh Cilantro
1 Jalapeno Chili, seeds removed and chopped
1 T Olive Oil


  • Put oil onion and garlic in pan and cook until soft
  • Chop roasted poblano chilis and put in pan with onion and garlic
  • Add all remaining ingredients and cook for approximately 10-15 minutes
  • Let mixture cool for a few minutes then place in blender and blend until smooth


This sauce is fabulous on chicken or cheese enchilada’s.
