Special Lunch

Made a new dish today for lunch. Totally easy and soooooo wonderful! Here are the ingredients: Buitoni Spinach Tortelini - stuffed with cheese 1 Cup heavy cream 1 tsp minced garlic 2 tsp minced fresh basil 1/4 Cup onion cut into small dice 1/2 tsp Tony Chachere's Creole Spice 4 ounces reduced crumbled low fat blue cheese 1 Cup left over chicken breast - cut into bite sized pieces Cook the tortelini according to package directions While the tortelini is cooking, do the following: Over medium high heat, add garlic and onion to hot pan and cook until soft. Add cream and creole spice and bring to a rolling boil then add the basil and blue cheese. As soon as the cheese melts, add the chicken and cook just until the meat is warmed up. Mix the tortelini with the sauce and serve.

2012-2013 Tentative Cooking Class Schedule

Hello fellow foodie!! Here is a tentative schedule of my upcoming cooking classes: French 9/25, 10/2, 10/9 and 10/16 Casseroles and Comfort Foods 10/23, 10/30, 11/6 and 11/13 Around the World 1/15, 1/22, 1/29 and 2/5 Chinese 3/12, 3/19, 4/9 and 4/16 French 4/30, 5/7, 5/14 and 5/21 You can check with MVUSD Adult Education or go to their web page for more info http://www.murrieta.k12.ca.us/ Domain/2051 This year you will be able to go to the above web page and register as well as pay for your classes. I'm not sure when they will be putting the classes in the system but keep checking!! The cost will remain $50 for the four week session (Discounted to $40 if you sign up 2 weeks early!) but the fee in class for the supplies is going up slightly from $5 to $7 due to the costs incurred at the grocery stores! Mousse au Chocolat

Wow, tonight I made the most awesome Mousse au Chocolat (with the help of my fabulous hubby!). New Recipe - Chinese at it's best!

Bought some turkey breast pieces at the store and decided to put it to good use with a new recipe. Made up my own recipe tonight for some turkey breast pieces - wow what a great treat it turned out to be. I marinated the turkey with a little soy sauce, garlic, and a tiny bit of chili oil, then covered it all with a little corn starch and let it rest in the fridge. Made a sauce out of soy sauce, sherry, honey and just a touch of hot chili paste and set it aside. Cut up half an onion, 2 carrots and 3 stalks of celery and cooked it in the wok with a little oil. Took the veggies out, added a little more oil and cooked the turkey. Once it was done, I added the sauce and cooked for about 30 seconds, added the veggies and served it over jasmine rice. Give it a try!! TIP: Always cut the veggies on the diagonal, because they cook faster!!! Stay tuned for more recipes and information about upcoming classes!!

CHINESE COOKING
Learn some new techniques in this class that will teach you how to use your Wok, make dishes such as Beef with Broccoli, Hoisin Pork, Won Tons, Spring Rolls and much much more.

Class cost is $50 for 4 weeks
($10 discount if you sign up 2 weeks early!!)
$5 per week in class for food to be prepared
Class is held at Vista Murrieta High School, Tuesday
evenings from 5:30-8 pm on the following dates:
March 20 and 27, April 17 and 24
(Spring break in the middle-no class)

Comfort Foods Cooking Class Starts February 21st

Cooking with Chef Zees will feature Comfort Foods on February 21, 28, March 6 and 13 and will run from 5:30-8 pm. This time of year, the casseroles and so good in the cooler weather. Warm up your kitchen with the aromas that remind you of your childhood! The 4 week class costs $50 plus $5 per class for food each week.
