Special Lunch
Made a new dish today for lunch. Totally easy and soooooo wonderful! Here are the ingredients:
Buitoni Spinach Tortelini - stuffed with cheese
1 Cup heavy cream
1 tsp minced garlic
2 tsp minced fresh basil
1/4 Cup onion cut into small dice
1/2 tsp Tony Chachere's Creole Spice
4 ounces reduced crumbled low fat blue cheese
1 Cup left over chicken breast - cut into bite sized pieces
Cook the tortelini according to package directions
While the tortelini is cooking, do the following:
Over medium high heat, add garlic and onion to hot pan and cook
until soft. Add cream and creole spice and bring to a rolling
boil then add the basil and blue cheese. As soon as the cheese
melts, add the chicken and cook just until the meat is warmed up.
Mix the tortelini with the sauce and serve.
